Kinboshi ramen is in a great location in a calmer neighborhood outside of the main downtown area. They have lots of seating indoors and outside, great for large groups. I ordered the Tokyo shoyu ramen, which had a great lighter broth flavor, which I prefer when there's meat involved. The piece of tonkotsu was a bit small and the egg wasn't marinated but it was perfectly cooked. Expect to wait. For my group's order, it took about 30 minutes to get our food and their line didn't stop. I would highly suggest to the owners to hire more help because the host was clearly overwhelmed and trying her best.

Best ramen in town. Umami is a hit. Spicy tonkotsu ramen is where it's at here. Plenty of seating. When I was served the girl was new and missed a few things in our order. But the food made us forget about that issue!

The best ramen I've had in a while! My nephew from Japan said the Ramen is legit!!! The pork in the Tonkotsu Red was perfectly done! We'll definitely be back!

I forgot to take a photo this time, but don't let that stop you: these guys are legit. Their tonkotsu broth is exceptional, striking an excellent balance with the heaviness and richness of the broth. The noodles come out a little chewy, but that's the trick: they don't get soggy as fast and they're very tasty. The meat was interesting, considering. It's not "melt in your mouth" tender; instead these guys take a different route. The chashu pieces are relatively small, but each piece had two halves: caramelized chewy pork and tender melty fat. Pop both in your mouth at once for a delicious balancing act: the fat softening and breaking up the chewy meat while retaining the flavor of the fat and the caramelized meat. It's not how I normally prefer my chashu, but goodness it worked out and I'm a sucker for pleasant surprises. This is the best ramen I've had in Portland so far. Highly recommended over the nearby Izakaya! The ambience isn't as impressive, but if you're there for the food, there's no comparison.

Great ramen spot near the convention centre with many vegan options. You order at the counter and they then bring your food out. I got the Vegan Miso Red ($16) and made it a combo by adding a Vegan Curry ($4). The food came out in about 10 minutes. The curry was solid, amply spicy, with nice textures. The ramen was very spicy, with a very decadent broth that seemed like it was infused with Szechuan peppercorns, along with chili oil and other goodness. The noodles were nicely el dente and, toppings-wise, came with a nice array of mixed shredded veggies and some sort of soy meat I think. Everything was presented very beautifully. Service wasn't particularly friendly, but it was attentive and quick. Great spot.

The BROTH is so rich and creamy! It rivals some of the best I've had in NYC. The noodles were bouncy - boing, boing- they were so good! The pork just melted...easily fell apart. Its a 'fast casual' style of service perfectly suited to ramen. Memorable!

Kinboshi does make good ramen. You can get spicy and regular versions of their ramen, and there are even vegan ramen dishes available. You can add a curry bowl to any ramen for only a few dollars more. The ramen is pretty good, but there is definitely better available. The noodles are a bit bland and kinda taste Italian in a weird way. The tonkatsu broth is also unremarkable until the very end when all the ingredients simmer down. That's normal, but it should be this pronounced. I'd go again but try something else.

The ramen was very good! The only complaints I have is that they cut the egg in half which seems cheap and not very effective. The broth was very flavorful and they provided chili oil for free on the side. The pork was outstanding but only putting 2 pieces for a $16 bowl of ramen seemed excessive to me

The best ramen broth in Portland! Very rich and flavorful. The chasu pork is very tender, and the toppings all pair well with the dish. The noodles are nice and bouncy. I often go back to Kinboshi to get this exact dish to get my ramen fix.

Back in town for a convention, and hit with the storm during the trip. Craving something warm to battle the cold, I was pleasantly surprised to find Kinboshi Ramen now offered pickup and delivery on DoorDash. The ramen was delicious, and impressively the noodles held quite well (without melding too much) for a 15 minute drive. The broth, noodles, and ramen were all packaged together, and made it easy to mix everything in the broth's large bowl. Gyoza was tasty, but the taste reminds me of Trader Joe's frozen gyoza. Hoping the restaurant will continue to offer pickup and/or delivery options.
